Low melting temperature
One of the difficulties encountered when melting chocolate is preventing it from burning. As chocolate melts at low temperatures, it is advisable not to set the temperature too high so that the chocolate melts slowly and evenly. The digital display shows the exact temperature of the water and the GN containers. The arrow keys can be used to adjust the temperature up or down. This is particularly important for white chocolate, which melts at 36°C, increasing the risk of burning compared to dark or milk chocolate.
Chocolate callets
This chocolate melter is easy to use. Fill the tray with water; make sure the water level is between the minimum and maximum marks. Place the 4 GN containers, size 1/6 and 10 cm deep, into the chocolate melter. Switch on the appliance and set the desired temperature. An indicator light on the display shows that the chocolate melter has reached the correct temperature. Now fill the GN containers with chocolate. The best way to do this is to use chocolate callets. This is chocolate in drop form and special melting chocolate. You can also use a bar, which should be cut into small pieces before being placed in the GN container. However, harder pieces of chocolate may remain in the container. Stir occasionally and remove the GN container from the chocolate melter when the chocolate has melted sufficiently.
Prevent lumps in the chocolate
As the four GN containers are placed side by side, there is a high risk of water entering the chocolate. If this water falls into the chocolate, the chocolate will clump together. That's why we recommend placing the supplied lids on the GN containers before removing a container from the chocolate melter. The lids have a practical recess for the spoon, allowing you to stir from time to time without having to remove the spoon from the container. It's also more practical to remove the GN containers at the front of the chocolate melter first, then those at the back. This way, there's less risk of spilling water.
Steam and water drainage
This chocolate melter is equipped with two practical drains on the side of the machine. The upper opening is the steam drain valve. You can open and close this valve. You must ensure that the steam drain valve is open when the machine is running. This allows hot air from the hot water to be expelled through the drain valve. This has the advantage of preventing steam burns when you want to remove a GN container. The bottom drain is used to drain water from the machine. After melting the chocolate, you can open this drain to clean the machine. Connect a drain hose to the sewer or place the chocolate melting machine next to the sink. The water can then be disposed of in the sink and drained via the drain hose.
Easy cleaning of the chocolate melter
To clean the chocolate melter, make sure the plug is disconnected. Make sure the machine and water are sufficiently cooled. Empty the water from the chocolate melter through the drain hose and carefully dry the outside and inside of the appliance. Clean the GN containers and lids with warm water and a mild detergent. It is essential to dry these detached parts thoroughly to prevent the GN containers from rusting.
